Actually, this is my *third* tried and true healthy cookie recipe to be added to the mix, but who doesn't like cookies?
During the recent Chicago Blizzard, a few snow days had us trapped inside and experiencing some cabin fever. By day two, I was crafted out, movied out, playing in the snow out..... so it was time to bake cookies!
Like most kids, my kids love chocolate chip cookies and while I try to keep them eating clean and healthy, they are kids. Kids Love Cookies.
I found this recipe on the back of the flour bag, seemed as easy as any, with a few tweaks I was able to keep it "clean". I personally love baking with spelt flour because it is fabulously nutritious, high in fiber and has a little bit of a nutty taste that is perfect for cookies!
Spelt Chocolate Chip Cookies
1/2 C Butter, softened
3/4 C Organic Sugar
1 Egg
1 Tsp Vanilla Extract
1/2 Tsp Baking Powder
1 3/4 C Spelt Flower
1/2 Tsp Sea Salt (Use Sea Salt- it makes a delicious difference!)
1/2 Organic Chocolate Chips
Preheat oven to 350
Beat butter, sugar, egg and vanilla extract
Blend in flour, baking powder & salt. Stir well.
Fold in chocolate chips.
Drop on oiled baking sheet by spoonful and bake 10-12 minutes.
Move to cooling rack

ReplyDeleteSarah, I highly recommend the Banana Choc Chip and the Almond Butter ones on my recipe tab- the almond butter ones are more flat/crunchy but so good!!!!
